I love entertaning friends and family at home but sometimes, preparation can seem overwhelming (especially if I have had a busy week). For times like these, I keep a few tried and trusted recipes up my sleave, here they are!
Entrée: Prawns with avocado mayonnaise (quick and no-fuss)
Method: Serve cook prawns with an avocado mayonnaise. Puree avocado flesh in a food processor with 1/2 cup sour cream, lemon or lime juice and a dash of Tabasco sauce. Guests can dip their own prawns into the mayonnaise or alternatively arrange prawns into serving glasses on a bed of baby cos lettuce and Lebanese cucumber cut into sticks, spoon some mayonnaise over the top serve with a slice of lime.
Main course: Chargrilled Atlantic salmon with coriander and saffron
6 Atlantic salmon steaks or fillets; 1 cup finely chopped fresh coriander; 1/2 cup olive oil; freshly ground black pepper; 2 tablespoons saffron threads.
Method: Preheat chargrill. Brush lightly with oil. Combine coriander, olive oil and a generous grinding of pepper. Brush each side of salmon with mixture and then place salmon on grill until cooked to your liking. Place a few saffron strands on each piece of salmon and serve with wedges of lime, a crisp green salad and maybe homemade potato chips.
Dessert: Old-fashioned strawberries Romanoff serves 4
500g strawberries, quartered; 1/4 cup (60ml) orange juice; 2 tablespoons icing sugar mixture; 2 tablespoons orange-flavoured liqueur (eg: Cointreau, Grand Marnier); 300ml thickened cream.
Method: Combine the strawberries, juice, icing sugar and liqueur in a medium bowl, cover and refrigerate for one hour. Beat the cream in a small bowl with an electric mixer until soft peaks form. Divide half the strawberry mixture among four 3/4 cup (180ml) serving glasses. Repeat layering with the remaining strawberries and cream.
